Saffron Delight

Ah, Saffron! It always makes me think of Christmas in Sweden! I make St. Lucia Buns every Christmas and saffron is the key ingredient.
Lucia buns are especially difficult to make here in Santa Fe where cooking at 7300 feet above sea level requires numerous adjustments to the recipe. Though it’s expensive (about the same cost per ounce as gold), saffron is well worth the price – just feast your eyes on the gorgeous color the milk takes on while heating on the stove once the red strands are mixed in. And.. OH! the aroma of these sweet buns as they bake in the convection oven!
Baking these buns is a sure sign the Christmas season has arrived in my kitchen!
